Steam 20 grams of chai in 150 grams of milk. Stretch until milk reaches 60 degrees (full cream milk), 55 degrees (alternate milk).
Stir 20 grams of chai together with a tablespoon of warm water in a non-stick pan to form a paste. Add 150 grams of milk while heating and stir through until milk reaches 60 degrees.
