Steam 20 grams of hot chocolate in 150 grams of milk. Stretch until milk reaches 60 degrees (full cream milk), 55 degrees (alternate milk).
Stir 20 grams of hot chocolate together with a tablespoon of warm water in a non-stick pan to form a paste. Add 150 grams of milk while heating and stir through until milk reaches 60 degrees.
